Super Easy Delicious Butternut Squash Soup Recipe

 One of our favorite comfort foods this time of year is butternut squash soup. It’s perfectly sweet and savory which in our book = 100% satisfying. You’re gonna LIVE for this “super easy” recipe. 

This recipe is perfect as a starter course or if you’re a soup addict like us just get a big bowl and dig in! Here’s my co-host of shows – Alternative Styles and Super Easy, Jesse Brune’s recipe.

Butternut Squash Soup
Serves 6
Ingredients:
1 butternut squash (2-3 pounds) – peeled, seeded, & cut into small chunks
2 tablespoons butter
3 shallots, chopped
4 cloves garlic, chopped
6 cups chicken or veggie stock
2 tsps brown sugar
2 tsps nutmeg
1 pinch red pepper
Salt and freshly ground black pepper
*Optional: heavy cream & fresh rosemary for garnish

Instructions:
In large pot melt butter over medium heat. Add shallots and garlic then cook until translucent, about 6 minutes. Add squash and stock. Bring to a simmer and cook until squash is tender, about 15 – 20 minutes. Remove squash chunks with slotted spoon and place in a blender and puree. (If you have an emulsion blender, go ahead and blend all the ingredients in the pot.) Return blended squash to pot. Stir and season with brown sugar, nutmeg, salt, and pepper. Serve.

Drizzle a small amount of heavy cream on the surface of each serving and top with a fresh sprig of rosemary.
