You KNOW you wanna make a pie this holiday season. If you have the patience to make your own pie crust then please – use this buttery pie crust recipe. Chef Jesse Brune who’s my co-host on pour Alternative Styles podcast mastered the pie crust and wanted to share for newbie bakers or those of us who have tried and failed before. He does say that it helps to have a “zen” attitude with this process.
It’s important to keep the butter cold while incorporating it into the flour. Don’t use too much water!!! Take it one spoonful at a time until you reach the consistency you want.

Buttery Pie Crust Recipe
*makes enough for top & bottom crust + decorations
Ingredients:
2 1/2 c. flour
1 c. butter, CHILLED & cut into cubes
1/2 tsp. salt
1/2 c. ice water
Instructions:
In a large bowl, combine flour and salt. Cut in butter until mixture resembles large crumbs. I use a pastry cutter but a sharp knife & fork can also work.
Stir in water, a spoonful at a time, until mixture forms a ball.
Cut into 2 even halves and wrap in plastic wrap. (I wrap in parchment paper then wrap in plastic wrap.) Place into the fridge for at least an hour. You can put it in the fridge overnight.
On a lightly floured surface, roll dough out to fit a 9-inch pie tin. Gently fold the dough in half (I place it over a rolling pin) and place it into the pie tin.
Gently press the dough evenly into the bottom and sides of the pie tin.
If using another layer, repeat the process and place the additional layer over your toppings. Pinch the bottom and top layer of the dough together along the border of the pie. Once the dough is sealed together, shape the crust into whatever shape you’d like. You can use a fork to seal the dough and create a classic crust design.
Coat the crust with egg whites or cream before baking.
Voilà, you have yourself a buttery pie crust ready for filling. Bake and devour.
