We were looking for a breakfast alternative to oatmeal or toast and came up with this super easy healthy and delicious chia pudding recipe. It’s an easy make ahead healthy breakfast or even dessert depending on what you choose to add to the mix from fruit to nut butters to even chocolate and coconut shavings. This recipe is also vegan. It tastes yummy.
You can make this pudding in about two minutes by adding all the ingredients in a blender.
Super Easy Delicious and Healthy Chia Pudding Recipe:
2 cups unsweetened almond milk
You can also substitute with coconut milk.
2 very ripe bananas
1 teaspoon of vanilla extract
2 teaspoons of cinnamon
6 tablespoons of chia seeds
Pour ingredients into a blender. Blend for about one minute. Then pour into a bowl. Put chia pudding in the fridge to set for several hours. Once ready, serve up a portion and add any toppings.
This delicious chia pudding is a healthy make ahead breakfast that happens to be vegan too. I like adding berries and even a nut protein butter on top. An easy way to make single servings and even travel with it is to pour the blended ingredients into small mason jars and store in the fridge. We suggest eating the chia pudding within four days.
This recipe can easily be tweaked to create a yummy dessert. I suggest adding cocoa powder or chocolate shavings to the mix. Or if you like coconut like me try adding coconut shavings on top.
