Cinco de Mayo Party Mini Chicken Enchiladas Recipe

For a tasty Cinco de Mayo fiesta, I shared my favorite mini chicken enchiladas cups recipe on Access Hollywood Live with super sweet and adorable, Kit Hoover and always up for a chat, Billy Bush. It’s such a simple and delicious recipe that this appetizer (and sometimes entrée) makes an appearance several times a year.

Getting ready to cook my Cinco de Mayo recipe: mini enchiladas cups (watch it) with Billy Bush and Kit Hoover on Access Hollywood Live.  (I’m wearing a dress by Karen Millen.)

Cinco de Mayo Recipe

Mini Enchiladas Cups

Serves 6 

Ingredients:

1 10oz bag of Beanitos Original Black Bean (or any salted variety chip)

2 chicken breasts, cooked and shredded

½ packet taco seasoning

1 15oz can black beans, rinsed and drained

1 can green enchilada sauce

1 can cream of chicken soup

½ cup diced onion

2 garlic cloves, minced

1 ½ – 2 cups shredded cheese, Mexican variety

1 container of Rojo’s Homestyle Salsa

1 tbsp. olive oil

Non-stick cooking spray

6 ovenproof ramekins

Directions:

1. Preheat oven to 375 degrees

2. Lightly spray dishes with cooking spra

3. In a skillet, heat oil and cook onions and garlic on medium heat for a few minutes (until onions are clear). Add enchilada sauce, soup, taco seasoning, black beans and chicken. Stir and heat until mixture starts to simmer. Remove from heat

4. Break Beanitos bean chips into small pieces. Start layering your ingredients with your chicken and sauce mixture (about 1/3 cup) then a light layer of crushed chips. Repeat. Cover the top with ¼ cup shredded cheese. Repeat for remaining 5 ramekins.

5. Bake for 15 minutes or until cheese is bubbly.

6. Top with your favorite fixings, like Rojo’s Homestyle Salsa and cilantro.

Enchiladas As The Entrée

Here’s an extra tip: If you double or triple the recipe you can turn this into a entrée for the fiesta rather than an appetizer. Instead of serving in ramekins put the enchilada sauce over brown or white rice, add a topping of crushed chips, shredded cheese and a scoop of salsa. It’s hearty and delicious! You don’t need a celebrationto enjoy this dish so go ahead and make it for the family any night.
